Ingredients

1-1/2 pounds of pork chops, cut 1 inch thick

1/2 cup soy sauce

2 teaspoons minced fresh ginger

1 teaspoon minced garlic

8 ounces sliced fresh mushrooms

2 tablespoons of butter.

Slice the mushrooms. If you're using large mushrooms, slice them into 1/4-inch thick slices. If you are using small button or cremini mushrooms, slice them in half lengthwise and then cut them into large chunks (if you want to be precise about it).

Wash your sliced mushrooms thoroughly under cold running water to remove any dirt or debris from the surface of the mushrooms before cooking. Sauté mushrooms in a large skillet over medium-high heat until golden brown.

2 tablespoons bourbon (or water)

Pour the bourbon into the saucepan and bring it to a boil over high heat. Reduce the heat to low, cover, and cook for 5 minutes, or until the liquid is reduced by half; remove from heat and set aside.

Heat a grill or grill pan over medium-high heat. Season your pork chops with salt and pepper, then drizzle with olive oil. Grill the pork chops for 4 to 5 minutes per side, until they're nice and crispy on the outside but still juicy in the center. Add the bacon to the pan and cook until crisp. Deglaze the pan with bourbon, scraping up any brown bits from the bottom of the pan. Add the thyme and butter to the pan and toss to combine. Grill pork chops for 3-4 minutes per side, or until cooked through.
